Sweet Baby Ray's Chopped Pork BBQ Nachos

Ingredients
- Center-cut pork loin
- Olive oil
- 1 chopped onion
- 2 chopped jalapenos
- 1 slice of garlic
- 1 bottle of Sweet Baby Ray's Sweet 'n Spicy Barbecue Sauce
- Yellow corn tortilla chips
- Shredded cheddar and pepper jack cheese
- Sour cream
- Guacamole
- Chopped green onions
Directions
- Smoke or bake a center cut pork loin then chop pork.
- Drizzle olive or other oil in hot skillet or flat top grill. Add one chopped onion, two chopped jalapenos and one garlic piece to oil and sweat for a few minutes.
- Add two cups of chopped pork to sizzling oil and sauté with onions, peppers and garlic.
- Add 3/4 cup (or more) Sweet Baby Rays Sweet 'n Spicy Barbecue Sauce to chopped pork and sauté until ingredients meld together.
- Spread yellow corn tortilla chips on a baking sheet and add pork mixture across the chips. Top with two cups of shredded cheddar and pepper jack cheese. Then melt under over broiler until cheese is melted.
- Top with dollop each of sour cream and guacamole. Accent with chopped green onions.
