Sassy Green Pork Chili

Ingredients
- 3 pounds pork shoulder with bone
- 1/4 cup olive oil
- 2 garlic cloves
- 1 tablespoon black pepper
- 1 tablespoon cumin
- 1 pint water
- 4 cups diced seeded green chilies
- 1/4 cup diced jalapenos (omit if you like your chili milder)
- 1 cup diced Roma tomatoes
- 1 cup Sweet Baby Ray's Sweet 'n Spicy Barbecue Sauce
Directions
- Prepare meat by cutting away from the bone. Process half in a food processor. Cut the remaining in inch cubes.
- Heat the oil in a heavy skillet. Brown the garlic.
- Heat all of the meat including the bone and brown evenly.
- Add salt, pepper & cumin. Stir well, add water and simmer until the meat is tender. Add liquid if needed.
- Remove bones and discard.
- Add chilies, peppers, tomatoes and Sweet Baby Ray's Sweet 'n Spicy Barbecue Sauce.
- Simmer on low until thick, stirring occasionally so as not to burn.
- Serve with tortilla or with rice. Freezes well.
