Honey Chipotle Grilled Baby Potatoes with Rosemary and Bacon

Ingredients
- ¼ cup Sweet Baby Ray’s Honey Chipotle BBQ Sauce
- 24 baby potatoes
- ½ cup bacon, cooked, chopped
- 2 tablespoons rosemary, fresh, rough chopped
- 4 metal skewers (over 8 inches in length)
- 2 tablespoons olive oil
- 1 teaspoon kosher salt
- ½ teaspoon black pepper
Directions
- Using a large pot of cold water gently simmer the baby potatoes for 15 minutes or until fork tender. You should be able to insert the tip of a knife in easily, but they should not be cooked far enough that they are falling apart, you want them slightly firm as you will be cooking them again. Cool under cold water quickly.
- Skewer the baby potatoes, 6 per skewer.
- Preheat your char grill to medium high and clean well.
- Oil the skewered potatoes and season with salt and pepper.
- Grill on all sides for 1 - 2 minutes equally.
- Once you have grilled all sides, brush with the BBQ sauce and allow an additional 10 - 20 seconds per side to set the BBQ sauce.
- Transfer to a serving plate and garnish with the chopped bacon and rosemary.
