Sassy Green Pork Chili

Ingredients

  • 3 pounds pork shoulder with bone
  • 1/4 cup olive oil
  • 2 garlic cloves
  • 1 tablespoon black pepper
  • 1 tablespoon cumin
  • 1 pint water
  • 4 cups diced seeded green chilies
  • 1/4 cup diced jalapenos (omit if you like your chili milder)
  • 1 cup diced Roma tomatoes
  • 1 cup Sweet Baby Ray's Sweet 'n Spicy Barbecue Sauce

Directions

  • Prepare meat by cutting away from the bone. Process half in a food processor. Cut the remaining in inch cubes.
  • Heat the oil in a heavy skillet. Brown the garlic.
  • Heat all of the meat including the bone and brown evenly.
  • Add salt, pepper & cumin. Stir well, add water and simmer until the meat is tender. Add liquid if needed.
  • Remove bones and discard.
  • Add chilies, peppers, tomatoes and Sweet Baby Ray's Sweet 'n Spicy Barbecue Sauce.
  • Simmer on low until thick, stirring occasionally so as not to burn.
  • Serve with tortilla or with rice. Freezes well.
